Ascorbic acid
Ascorbic acid comes from the New Latin 'scorbutus' meaning scurvy, a disease
that leads to lost teeth, bad gums, and bleeding into the skin. Ascorbic
means anti-scurvy. Scurvy was a particular problem to early mariners: entire
crews on three-year round-the-world voyages could fall to scurvy for lack of
fresh foods. Lemons and limes are usually given credit for solving the
problem in the British Navy, but actually it was cole-slaw that enabled the
fleet to sail the world. We now know ascorbic acid as the water-soluble
antioxidant Vitamin C.
